I’m pretty noobish, but for the life of me I can’t find how to add an email incoming webhook?

Well depending on your OS what you can do is, create a pipe on a specific email that redirect it to a application.
A practical example would be, if you have cPanel and your site is hosted there you can pipe an email account to a PHP, and make the PHP read it and send the Incoming Webhook.

As for doing it directly with Mattermost I am afraid its not possible, at the current time, and I am fairly sure that Slack does this in a similar way of how I explained it above.
@seanvree Depending on your email provider, you may also be able to set up a Zapier app to post to Mattermost from an email. We have documentation on setting up a Zapier integration here.
