Configure a Team Override Scheme

According to the documentation it’s possible to define a Team Override Scheme.

But on our Mattermost instance I can’t figure out how to access it

I’m probably missing something big, but it would be much appreciated if someone could point me the right direction

We’re on premise using 10.5.8.

But the documentation doesn’t reflect this fact…
