After updating the mattermost, the license switched to the Enterprise Edition and after the expiration, will it work and will the data be lost?
I currently have 300 users
Enterprise features will get disabled but otherwise no data will be lost https://docs.mattermost.com/overview/faq.html#what-happens-when-the-enterprise-edition-subscription-expires.

how can I downgrade the license key to the Team Edition

You can just click on the button in the System Console > Edition & License to downgrade the server to Team Edition:
