Our mattermost enterprise edition is 6.0.1 and I want to upgrade it to the least version, can I know the upgrade path that I should follow? is it allowed to upgrade it to the least version directly?

You can directly upgrade to 7.1.2 (as of today), no intermediate steps necessary. Please read the important upgrade notes to make sure you understand about the possible downtimes and maybe breaking changes and what queries you could run before attempting the upgrade.
