We just had another customer report the same problem. And it went away when the binary was run as the mattermost user.
At this point, I think it’s enough reason to open a ticket to start investigating, even though we cannot reproduce it. I opened one here: [MM-32234] Config.json resets itself to original if binary is run with root user starting from 5.30 - Mattermost
