I have added a “Person” property in my board (for an Assignee to a task), but none of the Team Members names show in the pull down, just my own.

The person drop down is filled with people who have access to your board, so if you can just see your own name it is very likely that the board has been created in your personal space.
Can you confirm that the board has been created in the correct channel? When you’re in the boards view, in the left hand side menu at the top, you should see a drop down that indicates the channel assigned to the board.
